Salsa Salad

This is such an easy salad to whip up and the perfect accompaniment to tacos, burritos, eggs or whatever protein takes your fancy.

Ingredients (serves 2) 

  • 1 medium avocado
  • 1/2 small red onion
  • 10 cherry tomatoes
  • 1/2 red capsicum
  • 1/2 yellow capsicum
  • 1 cup spinach
  • 1/4 cup chopped parsley
  • 1/2 lebanese cucumber
  • 1 tablespoon chopped chives
  • 1/2 small lime


  1. Slice the onion, capsicum, cucumber and tomatoes into chunks. Mix with the spinach and herbs.
  2. Add the avocado and the juice of the lime and mix well. Serve!
