This is such an easy salad to whip up and the perfect accompaniment to tacos, burritos, eggs or whatever protein takes your fancy.
Ingredients (serves 2)
- 1 medium avocado
- 1/2 small red onion
- 10 cherry tomatoes
- 1/2 red capsicum
- 1/2 yellow capsicum
- 1 cup spinach
- 1/4 cup chopped parsley
- 1/2 lebanese cucumber
- 1 tablespoon chopped chives
- 1/2 small lime
Method
- Slice the onion, capsicum, cucumber and tomatoes into chunks. Mix with the spinach and herbs.
- Add the avocado and the juice of the lime and mix well. Serve!
