Trying to get more vegetables into your diet? Try this tasty concoction. Perfect by itself, with crunchy carrots as a dip or as a ‘sauce’ with roast chicken.
Ingredients
- 1 small swede
- 1 small turnip
- 1 small sweet potato
- 1/4 cauliflower head
- 5 chives
- 50g Danish feta cheese
- 1 tablespoon avocado oil
- 1/2 tablespoon dried parsley
Method
- Preheat the oven to 180* C. Roughly chop the swede, turnip, sweet potato and cauliflower and bake until soft (approximately 15 minutes). Allow to cool.
- Place the vegetables, oil, herbs and cheese in a food processor and blend until smooth.
