Roast Vegetable Dip

Trying to get more vegetables into your diet? Try this tasty concoction. Perfect by itself, with crunchy carrots as a dip or as a ‘sauce’ with roast chicken.


  • 1 small swede
  • 1 small turnip
  • 1 small sweet potato
  • 1/4 cauliflower head
  • 5 chives
  • 50g Danish feta cheese
  • 1 tablespoon avocado oil
  • 1/2 tablespoon dried parsley


  1. Preheat the oven to 180* C. Roughly chop the swede, turnip, sweet potato and cauliflower and bake until soft (approximately 15 minutes). Allow to cool.
  2. Place the vegetables, oil, herbs and cheese in a food processor and blend until smooth.
