A beautiful summery combination of sweet and savoury.
- 1 packet baby pea leaves
- 1/4 watermelon
- 2 x chicken breasts
- 1 nest vermicilli noodles
- 1 tablespoon lime juice
- Preheat the oven to 200*C. Slice the chicken breasts into even slices and roast for 20 minutes or until no longer pink.
- Cook vermicilli noodles as per packet instructions. Chop watermelon into chunks.
- Combine the chicken, watermelon, noodles and pea leaves, and toss with lime juice before serving.
