Chicken and Watermelon Salad

A beautiful summery combination of sweet and savoury.


  • 1 packet baby pea leaves
  • 1/4 watermelon
  • 2 x chicken breasts
  • 1 nest vermicilli noodles
  • 1 tablespoon lime juice


  1. Preheat the oven to 200*C. Slice the chicken breasts into even slices and roast for 20 minutes or until no longer pink.
  2. Cook vermicilli noodles as per packet instructions. Chop watermelon into chunks.
  3. Combine the chicken, watermelon, noodles and pea leaves, and toss with lime juice before serving.
