Mango Tuna Ricepaper Rolls

This was the first recipe I’ve had published in a magazine and the most popular from my previous cooking blog.

Ingredients 

Rolls 

  • 4 pieces rice paper
  • 1/2 bunch broccolini
  • 1/2 medium sized mango
  • 1/2 medium sized avocado
  • 4 snow peas
  • handful of lettuce
  • 1 shallot
  • 1 tin tuna.

Dipping sauce

  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice.

Method

  1. Boil the kettle, pour the hot water into a shallow dish big enough to it the paper and allow to cool slightly.
  2. Lightly steam the broccolini and allow to cool. Drain the tuna. Finely slice the snow peas, mango, avocado, shallots and broccolini.
  3. To assemble the rolls, submerge a piece of the paper in the water until soft. Place on a flat surface and place ingredients lengthways in the centre. Fold both of the width ends in, before rolling the paper slowly and tightly until the roll closes on itself. Serve with dipping sauce.
