Smoothie Mousse

This is my new favourite breakfast invention – adding medium firm tofu and nuts to a protein shake to give it a delightful mousse consistency. Topped with your favourite fruit, seeds, nuts or grains, it’s like eating dessert for breakfast!


“Cherry Ripe” Smoothie Mousse 

It’s more ‘raspberry ripe’ than cherry, but this mousse tastes like eating chocolate pudding for breakfast! 

Ingredients – 1 banana, 150g medium firm tofu, 1/4 cup soy milk, 2 tablespoons protein powder, 1 tablespoon Mayver’s Food almond, cacao and coconut spread, shredded coconut, raspberries

Method – Blend the banana, tofu, milk, protein and spread in the blender until smooth. Top with coconut and raspberries before serving.


“Choc-Mint” Smoothie Mousse

Ingredients – 1 banana, 150g medium firm tofu, 1/4 cup soy milk, 1/3 cup baby spinach leaves, 3 mint leaves, pieces of choc-date fudge.

Method – Blend the banana, tofu, spinach, milk and mint until smooth. Top with fudge pieces and mint leaves and a dusting of shredded coconut before serving.


Choc Peanut Smoothie Mousse

Ingredients – 1 banana, 1/4 cup almond milk, 150g medium firm tofu, 2 tablespoons protein powder, 1 tablespoon Mayver’s almond, cacao and coconut spread, unsalted peanuts.

Method – Blend the banana, milk, tofu, protein and spread in a blender until smooth. Top with the peanuts before serving.
