Overnight Oats

Being organised is an important skill when you have a demanding job requiring shift work. Having some preserving jars in the fridge with overnight oats can be a godsend for a quick breakfast on the run (or coming home from night shift before a well needed sleep). Allowing them to soak overnight gives them a beautiful, thick, creamy texture that works well with a variety of nuts and fruit. Be prepared and be creative!

Basic Recipe

Ingredients (serves 1) 

  • 1/2 cup rolled oats
  • 1/4 cup milk
  • 1/4 cup natural Greek yogurt

Method

  1. Mix the ingredients until well combined.
  2. Place the mixture in a clean, dry mason jar (or airtight container) and store overnight in the fridge.

Coconut Overnight Oats with Cherries and Pomegranate

Ingredients – 1/2 cup rolled oats, 1/4 cup coconut milk, 1/4 cup natural Greek yogurt, 4 red cherries, 1 tablespoon pomegranate seeds.

Method – Make the basic recipe. Top with fruit before serving.
