This was a recipe recently thrown together while I was packing to go away for the weekend for a course. I may have a received a few strange looks going through airport security with my breakfast in a jar, but at least I was well prepared!
Ingredients (2 serves)
- 1 cup rolled oats
- 1/4 cup shredded coconut
- 1 tablespoon each of sunflower seeds, pepitas, walnuts, raw unsalted peanuts and pistachios
- 1 tablespoon goji berries
- 4 dates, roughly chopped
Method
- Mix all the ingredients until well combined.
- Keep in an airtight container until ready to eat. Serve with icy cold milk or Greek yogurt.
