Raw Fruit and Nut Muesli

This was a recipe recently thrown together while I was packing to go away for the weekend for a course. I may have a received a few strange looks going through airport security with my breakfast in a jar, but at least I was well prepared!

Ingredients (2 serves)

  • 1 cup rolled oats
  • 1/4 cup shredded coconut
  • 1 tablespoon each of sunflower seeds, pepitas, walnuts, raw unsalted peanuts and pistachios
  • 1 tablespoon goji berries
  • 4 dates, roughly chopped


  1. Mix all the ingredients until well combined.
  2. Keep in an airtight container until ready to eat. Serve with icy cold milk or Greek yogurt.
